I prayed for this woman during movie montages of chic girl squads having wild nights out - where would I ever find my wing woman? My soul sister? Being an almost-30 millennial can be so isolating.

But here she was. A few blocks southeast, filling canvases with color and nights with tequila.
⠀
Caroline encourages me to shave my eyebrows, then my hair, then bleach it.
⠀
We make very big plans (see photo), and then we promptly move on to the next shiny object.
⠀
She can take any wilting vegetables and simmer up a Mediterranean dish that would make any Yiayia proud.
⠀
She goes out of her way to ensure no voice is silenced when she’s around. She’s my mirror for when my back bone’s going soft.

She also has an ass that’ll make a grown man cry.
⠀
But you should see her heart.

Also me, 3 weeks after my finals:
In the last 2 weeks, I’ve eaten more veggies, le In the last 2 weeks, I’ve eaten more veggies, leafy greens, and legumes (beans & lentils) than any other period in my life. And that’s really saying something!

I have several clients I’ve put on a low-to-no starch dietary approach, so I’m doing it with them!

How can I guide nutrition clients through dietary protocols if I’ve never done them?
How can I give them a list of replacements without knowing how they taste?
How can I talk about quick breakfast options if I’ve never made them?
How can I give them a heads up about “there’s no options here!” situations that WILL come up?

That’s like giving parenting advice when I haven’t even babysat.
⠀
Today I made this plate and sent a photo to my clients showing them what’s possible in a 10 minute breakfast:
- Veggies leftover from yesterday’s’ dinner (baked curried cauliflower and fennel)
- Refried black beans (canned from Trader Joe’s)
- Shishito or any mild pepper pan seared in the same pan with
- 2 eggs (or tofu if egg-free)

I wouldn’t be able to recommend this meal and how well the flavors meld (it’s F’ing fantastic) if I didn’t mosey into my own kitchen and design a breakfast using the same no-starch parameters they have.

I’m so in love with what I do. I’m so honored when clients choose me to partner with. I’m so freaking excited to wrap up my Master’s program in 2 weeks and dive in even deeper!

P.S. This “no starch/slow carb” dietary approach is not because starchy foods are “unhealthy!” Let me repeat, STARCHES ARE PERFECTLY HEALTHY.

Rather, this approach tweaks specific mechanisms (blood sugar spikes and paired insulin response) and these individuals show a dramatic response to this tweak. With most of these clients, we tried at least 2 other approaches before this one because as a general rule I don’t like starting out by removing food groups.
